Bing the water to a boil in a large saucepan over high heat. Add the tea bags, remove the pan from the heat, and let steep 3-5 minutes. Remove the tea bags and whisk in the honey. Let the mixture cool until it reaches room temperature, then transfer it to a pitcher or jar and chill it in the fridge.
For each drink, fill a tall glass or pint Mason jar with crushed ice and add about 6 ounces of the tea mixture. Add 1 tablespoon lemon juice, then top it off with sparkling water. Gently stir to combine.
