Snowy Day Chex Mix
We first made this Chex Mix for a sledding party we hosted in New York. Adapted from a Betty Crocker recipe we came across, we jokingly called it our snowy day Chex mix and the name stuck.
Tim argues that it is a candy and not a snack mix, but either way it’s delicious and I always get requests for the recipe.
In addition to being great for winter gatherings, you can also divvy the mix up between festive holiday tins and have a gift for everyone from co-workers to neighbors.
Snowy Day Chex Mix
Ingredients
- 4 cups Rice Chex cereal
- 2 cups tiny pretzel twists, such as Snyder’s Itty Bitty Minis Pretzels
- 1 cup cashew halves & pieces
- 1 cup dried cranberries
- 8 oz vanilla-flavored candy coating
Instructions
- Mix Rice Chex, pretzels, cashews, and dried cranberries in a large bowl.
- Heat candy coating in the top of a double boiler over medium high, stirring frequently, until melted and smooth.
- Pour melted candy coating over Chex mixture in bowl, gently stirring to thoroughly coat.
- Spread mixture on a large wax paper lined baking sheet and let sit until cool, about 30 minutes.
- Break apart any large chunks and store in an airtight container.
